One of the favorite combinations in the whole food, plant-based diet is "beans and greens". Yes, broccoli is considered a green! Try this recipe with other greens as well: bok choy, collards, arugula, kale, spinach, Brussels sprouts, or cauliflower (yes, cauliflower is part of the "greens" family too!).
Cannellini Beans and Broccoli
Serves 2
1 can cannellini beans (white beans), rinsed and drained 2 tsp chopped garlic (they sell this in jars if you don't want to chop your own) 1 tsp dried rosemary, crushed between your fingers 4 cups broccoli (fresh or frozen), cut into bite sized pieces
1 cup cooked brown rice
Fresh herbs, optional as garnish Saute beans, garlic and rosemary in a non-stick pan over medium heat for a few minutes (add a little water if beans stick). Add broccoli and continue cooking until broccoli is fork-tender but still bright green, about 5 minutes. While broccoli cooks, warm up the cooked brown rice. When broccoli is done, stir in the warmed cooked brown rice. Garnish with fresh herbs if desired.
