Potatoes and apples pair up in this quick and easy oil-free variation on traditional potato salad that is filling enough to be a main dish. With only six ingredients it can be put together in about 15 minutes. Without mayonnaise or dairy that can spoil, this salad is great to take to work or when traveling.
Apple Potato Salad
Makes 3-4 servings
4 medium red potatoes, leave skin on, cut into chunks
1 medium red onion, diced
1 small apple, leave skin on, cored and diced
parsley, chopped, optional as a garnish
Dressing:
4 teaspoons maple syrup
3 teaspoons apple cider vinegar
2 teaspoons yellow mustard
Steam (or boil) potatoes until fork tender. Place in a bowl with the onion and apple. Mix dressing ingredients in a small bowl. Pour dressing over and combine. Garnish with parsley if desired.
