Years ago I had a granola recipe that was easy and delicious. It had nice crunch, the right amount of sweetness, and was inexpensive to make. BUT....it had 1/3 cup of vegetable oil and 1/3 cup of refined brown sugar! Oh my, how my ways have changed.
This budget-friendly, super simple, oil-free, granola is crunchy, hearty, and contains no refined sugar. It's a guilt-free breakfast or anytime snack. I eat it as dessert! This recipe can be doubled for even more crunchy goodness!
Easy Oil-Free Granola
Makes 2 1/2 cups
2 cups old-fashioned rolled oats
2 TBS date syrup
1 TBS maple syrup
2 tsp ground flaxseed
several dashes of cinnamon
Set oven to 350°. Combine all ingredients in a large bowl. Spread out evenly on a parchment paper lined baking sheet. Bake 10 minutes or until lightly browned. Let cool completely before placing in an airtight storage container.
Notes:
I don't like nuts or raisins in my granola but feel free to add whatever mix-ins you like. You can also top it with fruit such as berries, apple chunks, or banana slices.
If you can't get date syrup you could use all maple syrup or substitute agave.
