We love veggie burgers in our house but if you look at the list of ingredients on the store bought frozen ones you will almost always find oil as well as other questionable ingredients. Veggie burgers are actually very easy to make at home as I have detailed here with my Easy Black Bean Burgers. Here is another version of a black bean burger that takes even less time so they are the Even Easier Black Bean Burgers! If you have your rice or quinoa all ready this is very quick. Many grocery stores sell frozen prepared rice and quinoa if you don't want to make a batch, but I typically make a big batch of brown rice and then freeze in 1/2 cup portions so that I have it ready for other dishes in a hurry.
Even Easier Black Bean Burgers
Serves 2 (can easily be doubled, tripled, etc.)
1 can (15 oz) black beans, drained and rinsed
2 Tablespoons Old-Fashioned Rolled Oats
1/3 cup cooked brown rice or quinoa
2 Tablespoons chopped onion
1 Tablespoon chopped parsley (or any herb of choice)
4 teaspoons nutritional yeast
1/2 teaspoon garlic powder
Mash beans in a bowl with the back of a fork or potato masher. Add all other ingredients and mix well. Form into two patties. These burgers hold together very well so you can place on a grill, fry in a pan, or bake in the oven or air fryer. They will take about 5 minutes per side. Serve with fixings of choice - tomatoes, lettuce, ketchup, mustard, relish, etc.
