Rice and beans are a very popular plant-based diet combination. Keep them on hand along with some salsa or pico di gallo and you can always make a quick meal. This fast and easy dish will come together in about 10 minutes.
Most grocery stores have prepared brown rice - usually frozen. Just make sure it has nothing added to it such as salt or oil. For a more budget-friendly option buy dry brown rice and cook it yourself. Frozen vegetables are fine here too. Just cook them first on the stove or in the microwave.
Fiesta Rice
1 1/2 cup cooked brown rice
1 1/2 cups black beans (one can, drained and rinsed)
1 cup pico di gallo or salsa
4 cups cut up vegetables of choice (corn, peas, onions, zucchini, carrots, yellow pepper)
Mix all together in a bowl. Makes 2 servings.
