When cooked on a grill just about any meal seems to taste better. Whether it's a summer dinner on the patio or a 4th of July barbecue something plant-based that can be grilled is always welcome. Yes, vegetables are fairly easy to grill, particularly on a skewer or grill pan, but what about an entree? What do you eat when everyone else is digging into steaks and you want something beyond the humble veggie burger? Well, fire up the barbecue because I've got you covered with this terrific grilled tofu covered in a cool and refreshing strawberry-orange sauce.
The tofu is sliced into pretty triangles and then marinated in lemon juice, lemon zest and fresh rosemary. Grill* directly on the grill rack and finish it off with a light and healthy sauce. Serve with orzo with dried plums and almonds and grilled dijon and thyme zucchini and you've got yourself one delicious meal!
It is important to use the super firm, high protein tofu for this recipe so that it will hold together on the grill. If you can't find super firm, use extra firm but press it for several hours to remove the water.
Grilled Tofu with Strawberry-Orange Sauce
Serves 4
For the Tofu:
1-16 oz package super firm, high protein tofu
1 lemon, zested and juiced
2 tablespoons chopped fresh rosemary
For the Strawberry-Orange Sauce:
2 cups fresh strawberries
juice of an orange
1 tablespoon chopped shallot
1 tablespoon maple syrup
Slice the tofu into four pieces lengthwise. Cut each slice diagonally to create triangles. Place in a 9x13 baking dish and pour the lemon juice over the slices and sprinkle with the lemon zest and rosemary. Set aside and marinate for at least 30 minutes, preferably longer.
Place all sauce ingredients in a high powered blender or food processor. Blend/process until just chunky.
Grill* tofu slices over high heat for 3-5 minutes on each side or until grill marks appear and the tofu is getting brown around the edges. Transfer two slices to each of four plates and top slices with the strawberry sauce.
*The tofu can also be broiled in the oven. Broil 5-10 minutes or until the tofu begins to brown.
