What is Guacasalsa? It's where guacamole meets salsa verde! This is a super easy, jazzy dip that combines the best of both. The addition of silken tofu makes this delicious salsa dip a little creamy and it's smoother than my tomatillo salsa. It's also milder tasting because it uses less jalapeños. Enjoy with your favorite oil-free tortilla chips (or make your own if you can't find oil-free by toasting oil-free corn tortillas). You can also serve with fresh vegetable crudité if you prefer.
Guacasalsa
Makes about 3 cups
2 ripe avocados , pitted, skin removed, and cut into cubes
1 11-oz can tomatillos, drained
1/2 cup chopped red onion
1/2 cup chopped fresh cilantro
1/4 cup silken tofu
1 1/2 teaspoons, drained and chopped pickled jalapeños*
1 1/2 tablespoons fresh lemon juice
1 garlic clove, roughly chopped
1/4 teaspoon ground cumin
salt and pepper to taste
Place all ingredients in the bowl of a food processor and blend until the mixture is almost smooth but still has some texture (see photo). You can actually make this as chunky or as smooth as you like. Serve the dip with tortilla chips or fresh vegetables.
*You can also use 1/2 of a fresh jalapeño. Remove the seeds if you don't want your dip to be hot.
