Kid-Friendly Vegan Chili




Need a meal that both kids and adults will enjoy? Look no further than this kid-friendly vegan chili. It's chock full of healthy beans and veggies without an overwhelming amount of spice. Lots of flavor for adults but still mild enough for little ones to enjoy.


Kid-Friendly Vegan Chili

Makes 6-8 "kid" servings or 3-4 "adult" servings


1 14 oz can diced tomatoes (can also use canned whole tomatoes, cut up)

1 small green pepper, diced (any color pepper will also work)

1 small onion, diced (about 1/2 cup)

1 8 oz can tomato sauce

1 tablespoon chili powder

1 14 oz can garbanzo beans (chick peas), drained and rinsed

1 14 oz can chili beans, undrained


Place tomatoes, green pepper, onion, tomato sauce, and chili powder in a large saucepan. Stir and bring to a boil over medium-high heat. Lower heat to medium-low and simmer for 10 minutes.


Add drained garbanzo beans and undrained chili beans to the pan. Stir, cover pan with a lid, and continue to simmer 10 more minutes. Serve in bowls with tortilla chips if desired.
