Start your day with this heart healthy, cholesterol-lowering, energy-giving breakfast! If you really want to make your blood vessels happy serve it with a side of steamed greens!
Start Your Day Right Oatmeal
1/2 cup rolled oats (see note)
3/4 cup water
1 ripe banana, peeled
1/2 blueberries (fresh or frozen and thawed) (see note)
1/4 teaspoon cinnamon (or to taste)
1 tablespoon chia seeds, optional - do not use if weight loss is your goal
1 tablespoon ground flax seeds, optional - do not use if weight loss is your goal
a pinch of green matcha powder (also called ground green tea powder), optional
Combine oats and water in a bowl and microwave 2 minutes (or cook in a pan on the stove over medium-high heat until water is absorbed). While oatmeal is cooking, mash the banana. Top oatmeal with mashed banana and all other ingredients, stir and enjoy!
Note
I actually prefer steel cut oats but they take longer to cook. Bring 1 1/2 cups water to a boil in a small pan. Add 1/4 cup steel cut oats, reduce heat and simmer uncovered, stirring occasionally, for about 20-25 minutes or until water is absorbed and oats are tender.
I think the blueberries make this taste like a blueberry muffin, but any other berry or fruit is also delicious. Try strawberries, raspberries, blackberries, chopped apples, chunks of mango, peaches, or pineapple or a combination of any berries and fruit.
Green matcha powder can usually be found with the teas in at the grocery store.
If you don't have a deep bowl, I really like these bowls. They work well for this oatmeal, a serving of my big salad, and all kinds of bowl meals like this sweet potato bowl.
