Stuffed Pizza Bites


Need lunch or dinner in a hurry? Try these stuffed pizzas that will not only satisfy kids but adults too! And the best part? Only 5 ingredients! You can double or triple the recipe to feed more people and use whatever vegetables you like!

Stuffed Pizza Bites

4 whole wheat pita rounds (or other whole grain pita)

3/4 cup hummus (use store-bought for convenience or make my oil-free hummus)

1 cup pizza sauce (use store-bought or make your own - recipe below)

1/2 cup diced green pepper

4 mushrooms, sliced


Heat oven to 400°. Slice open the pita rounds. The easiest way to do this is to cut around the outside with clean scissors and then separate the halves. Place 4 of the pita halves on a baking sheet and toast in the oven for 2 minutes. Remove from the oven. Spread hummus on each of the four halves. Spread the sauce over the hummus. Top with the green pepper and mushrooms. Place the untoasted pita half on top of each. Bake in the oven for 8 minutes. Remove and cool for three minutes before cutting each round into 4 wedges.


It can be difficult to find oil-free pizza sauce so here is a quick and easy way to make your own:


Oil-Free Pizza Sauce

Makes 1 cup


1 14 oz can of diced tomatoes

1 teaspoon italian herb blend seasoning (or a use a combination of seasonings such as oregano, basil, marjoram, thyme, rosemary and garlic powder)

2 cloves garlic


Combine all ingredients in a blender and blend until smooth. If you do not have a blender, just chop the tomatoes into small pieces, mince the garlic, and combine with the seasoning.
