Why take a perfectly healthy food like potatoes and fry them in a lot of oil creating a greasy mess? These breakfast potatoes are healthy, flavorful, and super simple to make with absolutely no oil. If you have 20 minutes you have breakfast potatoes that are delicious anytime!
Super Easy Breakfast Potatoes
Serves 2
1 lb new potatoes (or other small potatoes)
1/2 cup chopped shallots
1/2 teaspoon paprika
1/2 teaspoon dried rosemary
1/4 teaspoon dry mustard
1/8 teaspoon salt, optional
Preheat oven to 450°. Slice potatoes lengthwise and place cut side down on a baking sheet lined with parchment paper. Roast potatoes in hot oven for 15 minutes or until the cut side has turned golden brown. When the potatoes are done remove from the oven and set aside. Dry sauté the shallots in a non-stick skillet over medium heat about 3 minutes until they begin to soften (if no non-stick pan use a little water to prevent shallots from sticking) . Add the paprika, rosemary, mustard, and salt. Continue to cook the shallots 2 more minutes. Add roasted potatoes and cook until potatoes are hot. Serve immediatly.
Serving suggestion: Pair up these potatoes with tofu scramble and a whole grain English muffin topped with hummus.
