Tater Bites


It doesn't get more kid-friendly than baked potatoes! Add some fun and tasty toppings and you have a whole food, plant-based meal that both kids and adults will love! Choose from two different toppings: Cheezy Broccoli or Chili and Tortillas.


Tater Bites


2 large baking potatoes

Choice of potato topping


Cut potatoes in half length-wise. Sprinkle salt over the cut side if desired. Place potatoes, cut side up, directly on oven rack in a 450° oven for 45 minutes or until nicely browned on top and easily pierced with a fork. Remove from oven and cut each potato into thirds. Top each piece with desired topping. Serve with apple slices and crunchy carrot sticks.


Cheezy Broccoli Topping

2 cups broccoli florets

1/2 cup raw cashews

1/2 cup water

2 tablespoons lemon juice


Steam (or boil) broccoli for 3 minutes until tender but still bright green. Remove from heat (or drain if boiling) and rinse under cool water to prevent further cooking. To make "cheezy" sauce, blend cashews, water, and lemon juice in a high speed blender until smooth. Continue to blend about 2 minutes more to warm the sauce. Place some broccoli pieces on each potato piece and top with cheezy sauce.



Chili and Tortillas Topping

1 cup Easy Vegan Chili (or your favorite prepared chili)

Tortilla chips


Heat vegan chili in saucepan or microwave until warm. Top potato pieces with chili and crush tortilla chips on top.
